This is a delicious recipe and a healthy alternative to regular store bought ice cream.
You will need either a Vitamix high speed blender (preferred) or a food processor to get the ice cream to the right consistency. The food processor can take a bit of a beating breaking up the frozen bananas.
To start you will need to ripen a bunch of organic bananas (wait till the skins are covered in brown spots) then peel and freeze them (broken in half so they are easier to blend).
Fill your blender halfway with frozen bananas. Next, add about a third of a cup of nut or rice milk to the blender. If your Vitamix has variable speeds, turn it on at the lowest setting and slowly turn the speed halfway up. Vigorously use the plunger (black accessory in the picture below) to force the bananas into the blade of the blender. Keep doing this until the bananas become an ice cream like consistency.
Next, add 6 fresh strawberries to the blender along with a few drops of vanilla extract (or the inside of a vanilla bean). Use the plunger again to mix in the added ingredients.
Put the ice cream into bowls. This recipe will yield three generous servings. Have some fresh strawberries washed and precut to put over the top of the ice cream and serve right away.
The finished ice cream is delicious and is fairly easy to make. It’s amazing how this recipe is able to mimic the consistency of “real” ice cream so well.
Try mixing some of your other favourite ingredients (cacao, other fruits, nuts, etc.) with bananas and see what interesting flavours of ice cream you can come up with.
