I made this delicious recipe the other night that is fairly simple and tastes delicious (I love burritos!). Basically there are 3 separate parts to the recipe that are combined in the end in a tortilla (a healthier option is to use brown rice tortillas).
Sweet Potatoes
Ingredients: 2 large sweet potatoes (diced and peeled) and one tsp cinnamon.
Directions: Boil water in a saucepan and add diced potatoes (cook until fork tender), drain and mash with cinnamon. Set aside.
Beans
Ingredients: 1 tsp olive oil, 1/2 onion (chopped), 1 clove garlic (diced), 2 cans of kidney beans 14 oz (drained), 2/3 cup of filtered water, 1 tbsp chili powder, 3/4 tsp ground cumin, 1 tsp mustard (dry), 1 pinch cayenne powder and 1 tbsp tamari.
Directions: 1. Heat oil in a skillet, saute onion and garlic until soft then add in beans and mash everything together. 2. Gradually stir in water. 3. Remove from heat and stir in the rest of the ingredients and set aside.
Mexican Rice
Ingredients: 1 1/2 tbsp olive oil, 1 onion (chopped), 3 garlic cloves (sliced), 3/4 cup of crushed tomatoes, 1 tsp chili powder, 1 tsp sea salt, 2-3 jalapeno peppers (seeded/chopped), 1 1/2 cups of long grain brown rice and 2 3/4 cups of filtered water.
Directions: 1. Heat oven to 350 degrees F. 2. In an ovenproof Dutchoven, heat oil on medium heat and add onion, garlic and jalapeno peppers and cook while stirring often. 3. Stir in rice and cook for 1 minute. Add filtered water, tomatoes, chilli powder and sea salt. Bring to a boil then stir and cover. 4. Bake for 1 hour without stirring then fluff with a fork.
Putting It All Together!
1. Take the tortillas and add the 3 above items in the desired amounts. 2. Wrap burritos and broil them on HI for a few minutes until golden brown. 3. Enjoy!
Side Notes: When I had the leftovers the next day I made some homemade guacamole to line the burrito once it was cooked which is an addition I highly recommend! I enjoyed this recipe for 3 days straight with all the leftovers I had and writing this up (evening of day 3) I’m still craving more! One thing I want to try in the future is instead of using olive oil substitute for coconut oil (a much healthier oil to cook with) and see if it tastes as good.
